Carabinero Shrimp Carpaccio

Ingredients:

For the Carpaccio:

  • 8-10 fresh raw Carabinero shrimp, peeled and deveined
  • 1 lemon, zest and juice
  • 1 lime, zest and juice
  • 2 tablespoons extra-virgin olive oil
  • 1 small shallot, finely chopped
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste
  • Fresh chives, chopped, for garnish
  • Microgreens or baby arugula, for garnish

For the Avocado Puree:

  • 1 ripe avocado
  • 1 tablespoon fresh lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Shrimp:

    • Rinse the raw Carabinero shrimp under cold water and pat them dry with a paper towel.
    • Cut each shrimp in half lengthwise to create thin slices. Set aside.
  2. Prepare the Marinade:

    • In a small bowl, combine the lemon and lime zest, lemon juice, lime juice, extra-virgin olive oil, chopped shallot, minced garlic, salt, and freshly ground black pepper. Whisk together to create the marinade.
  3. Marinate the Shrimp:

    • Place the Carabinero shrimp slices in a shallow dish.
    • Pour the marinade over the shrimp slices, ensuring they are well coated.
    • Cover the dish with plastic wrap and refrigerate for about 20-30 minutes to allow the shrimp to marinate and "cook" in the citrus juices.
  4. Prepare the Avocado Puree:

    • In a blender or food processor, combine the ripe avocado, fresh lemon juice, salt, and pepper.
    • Blend until you achieve a smooth and creamy consistency. If needed, add a touch of water to reach your desired texture.
    • Taste and adjust the seasoning as necessary. Set aside.
  5. Assemble the Carpaccio:

    • Arrange the marinated Carabinero shrimp slices on serving plates, creating a single layer.
    • Drizzle some of the marinade over the shrimp slices for extra flavor.
  6. Serve:

    • Spoon dollops of the avocado puree onto the plates, alongside or over the shrimp.
    • Garnish with fresh chives and microgreens or baby arugula.
  7. Enjoy:
