Scallops are bivalve animals similar to oysters, clams, and mussels. They differ in the fact they live on the sea bed. Their meat is the muscle that the scallops use to open and close their shells. Scallops have very delicate meat that is considered a delicacy. When cooked correctly the scallop will transform any plate or be the showstopper of the dinner.
